Summer Salads Part II



Horseradish Potato Salad

3 pounds small (2-inch) potatoes, your choice of variety (I found a rainbow-colored ones at my local farmer's market)
1/4 cup red onion, chopped
1 tablespoon white-wine vinegar
1 cup sour cream (or 1/2 cup sour cream, 1/2 cup yogurt)
2 tablespoons fresh dill, finely chopped
1/4 cup chopped fresh chives (frustratingly, couldn’t find these)
1 tablespoon Dijon mustard
3 tablespoons prepared horseradish
1 teaspoon salt
1/2 teaspoon black pepper

Boil the potatoes until fork tender, cool them to room temperature and quarter them. In a large bowl, mix the remaining ingredients and fold over the potatoes. Adjust seasoning to taste — you might add another tablespoon of vinegar if you feel it needs more ‘zing’.

Summer Salads Part I


Green Bean and Cherry Tomato Salad
Adapted from Chez Panisse Vegetables

Serves 6

1 pound green beans, though if you can find a mix of green and yellow beans, it will be all the prettier
1 pound cherry tomatoes
1 large shallot
2 tablespoons red wine vinegar
Salt and pepper
1/3 cup extra-virgin olive oil
Basil or other herb (optional)

Prepare the vegetables: Top and tail the beans and cut them into large segments. Parboil the beans in salted water until just tender, about four to five minutes. Drain and immediately spread them out to cool. Stem the cherry tomatoes and cut them in half.

Make the vinaigrette: Peel and mince the shallot and put it in a bowl with the vinegar and salt and pepper. Whisk in the olive oil. Taste and adjust the balance with more vinegar, oil, or salt, as needed. Toss the cherry tomatoes in with the vinaigrette; this can sit for a while. Do not add the green beans until just before serving or they will discolor from the acid in the vinaigrette. For variety, the salad can be garnished with basil or some other fresh herb such as parsley, chervil or hyssop.

Do ahead: Beans and vegetables can be prepared ahead of time. Simply toss with the dressing only at the last minute, as it can discolor the green beans after several hours.

World’s Largest Block Party



Old St. Pat’s Church will be the host for the Annual World’s Largest Block Party on Friday July 10th and Saturday July 11th from 5:30pm-10:30pm. This party draws a large crowd so be prepared for a lot of people. There will be some of Chicago’s finest foods to taste along with adult beverages and music. Each admission to the block party gets you five tickets for one of the following; beer, wine, water or pop. You can’t beat that. A friend and I are volunteering on Saturday night.

Music will be performed on the Main Stage and South Stage by Green River Ordinance, Collective Soul and several others. The first 100 people there each day who bring a food donation will receive a free hot dog from the Old St. Pat’s Grill. The party and the food donation will help the mission and outreach activities of Old St. Pat. There is nothing better than enjoying a good party and helping others in the process. Tickets are $35 per night or $60 for both days when purchased together. The event is for the 21 and over crowd.
